This morning we took things slowly. My Biggest Boy joined me on the couch for stare-into-space-time. Husband got to sleep in and the Little Boy didn't start whining until I said I was cooking a Puffy Peach Pancake and he wasn't going to get cold cereal, (cause you know, I'm such a bitch.)
The Puffy Pancake is pretty simple. I adapted it from a recipe in Cooking for Isaiah which is an amazing resources for family friendly GFDF cooking. I used a 12 inch iron skillet and simmered a jar of peaches I canned over the summer, plus about a 1 1/2 C of berries. I used blueberries, blackberries and some strawberries that I had cooked down the day before for crepe filling. You can add about a half cup of sugar depending on the ripeness of the fruit. If the sauce if too watery, add a little cornstarch (up to say, 1/4 C) for thickening. I also added cinnamon and all spice to the fruit. Mix up a batch of pancake batter, add an extra 1/2 C sugar, pour it on top, then bake it in the oven until the top is browned (about 20 mins at 400 degrees.) So easy and sooooo tasty!
Husband had promised the kids lemonade the day before and gave in this morning, so we had that with our breakfast. He used fresh squeezed lime and lemon juice plus we ladled off some of the berry syrup that had cooked down from the Puffy Pancake and stirred that in. It was so pretty and pink and it tasted like a Sonic Cherry Limeade (if you aren't from the South you don't know what you are missing!)
